Tell Me about the Healthy Eating Retreat
Join nutritionists Susan Gins and Charles
Rosenberg and yoga instructor Susan MacIntosh
for a peaceful retreat weekend of detoxifying
food and uplifting yoga classes. Light,
delicious meals of fresh raw vegetable
juices,salads and satisfying soups will give
your body the nutrients it needs to perform
the essential function of detoxification
without burdening your body with excessive
calories. Cooking demonstrations and individual
nutrition counseling will teach retreat
participants the techniques to prepare healthful
foods so they can transform the way they eat
at home. Plus, there will be plenty of time for
relaxation and enjoyment of the beautiful natural
setting, including optional beach walks and hikes
in the nearby hills.
“You are what you eat!” is one of the truest
statements of all time. The way we feed our
bodies deeply affects the way we look, feel
and behave. The physical body thrives when
fueled by the best quality fresh fruits,
vegetables and proteins. Processed foods add
toxins to our systems and steal vital nutrients.
Plant foods ingested in their natural state
maintain their original vitamins, minerals,
enzymes and trace nutrients. Eating foods in
their natural state helps bring clarity and
vitality to the rest of our being, balancing
the mind, emotions and spirit.
This is the perfect opportunity for those
who’ve always wanted to take a break from
heavy eating but didn’t have the discipline
or tools to start on your own. At the end
of the weekend, you’ll feel cleaner, lighter

How Yoga Supports the Retreat . . .
Yoga classes offered are suitable for all
levels of students. There are two classes
daily along with a meditation class. Hatha
yoga and meditation have been practiced for
centuries as a medical tool for treating
physical ailments; as a psychotherapeutic
tool for emotional imbalances; and as a
spiritual tool to help understand the nature
of the mind and the nature of life. As we
become more in tune with and aware of our
bodies, we automatically want to take better
care of ourselves in all ways. Two optional
guided hikes will be offered to provide an
opportunity for cardiovascular activity.

About the Location . . .
The Aliso Creek Inn is nestled into a steep
canyon winding along a creek and offers one
of the most dramatic views in Orange County.
The quiet seclusion of the inn provides the
perfect setting for a retreat. The inn is
just off Pacific Coast Highway and is within
walking distance of the beach, offering a
nine hole golf course, non-chlorine pool and
hot tub with full spa available. The Montage
Resort, directly across the street, offers
its spa and workout facilities to our
participants at a nominal daily rate.

About the Facilitators. . .
SUSAN GINS, M.S.
Certified Nutritionist
Master of Science in Nutrition,
Bastyr University
Susan started her private nutrition
practice in 1997. Her training includes
whole foods, herbs, supplements,
vitamins and minerals. She emphasizes
the healing power of food and moderation
in all things. Susan has conducted health
retreats for three years. Susan lives in
Kenmore, Washington.
SUSAN MACINTOSH,
Certified Yoga Instructor
Susan has practiced yoga since 1986
and became a certified instructor in 1993.
Susan’s style of teaching places importance
on form and alignment and her encouraging
style of teaching makes each student feel
welcome and safe. Susan has participated
in health retreats for five years and
facilitated retreats over the past two years.
She lives in Irvine, California
CHARLES ROSENBERG, M.S.
Certified Nutritionist
Master of Science in Nutrition,
Bastyr University
Charles practices nutrition counseling
in Los Angeles where he advises clients
on healthy eating. In addition, he
provides private cooking services in
client’s homes. Charles is a food
journalist with a regular feature in
Distinction magazine.
